Vegan Almond Chocolate Cookies
Although I fancy a rather healthy organic diet and lifestyle, I find it hard sometimes to stop myself from overindulging. I just L O V E chocolate. And wine. Not particularly in that order;) So I'm always looking for healthier alternatives and ways to cut calories.
I believe in balance and a certain consciousness when it comes to where to buy your food. I don't necessarily live a vegan, dairy or gluten free diet. But I like to integrate some of these delicious and smart food ideas into my diet. It all started a few years ago when I was looking for a breakfast snack that I could eat on my way to yoga class. I just started experimenting and came up with a recipe for a protein rich and gluten free almond flax cake (recipe will follow). And my passion for healthy baking was born.
There are a lot of great recipes for vegan cookies on the internet. But I noticed that most of them require a food processor or dehydrator (neither of which I own). I'm pretty lazy in the kitchen and like to keep it as simple as possible. So I just experimented a little bit. These Almond Chocolate cookies came out so good. And they're filling and nutrient rich too!
I prefer a less sweet taste so I reduce the measurements of the agave sometimes. If you don't follow a vegan diet you can use honey instead. Follow this recipe or get creative and add whatever you like. But don't forget to share your pics or ideas with me!
Yield: 14-16 cookies
Prep Time: 5 min.
Cook time: 1 min.

Ingredients:
- 2 1/2 cups (300gr) almond meal
- 1/2 cup (64gr) cacao powder
- 1/2 cup (64gr) sunflower seeds
- 3 tbsp coconut oil
- 1/4 cup (60ml) agave nectar
- 1 pinch sea salt
- 2 teaspoon vanilla extract
optional: 1/4 cup (30gr) hempseeds for extra protein
Makes about 21 - 24 cookies

Directions:
Preheat the oven to 300 F (150 Grad C). Mix all the ingredients in a mixing bowl and knead the dough. Take a little bit of dough and roll it into a ball. Then press it flat in between your hand and place it on the baking sheet.
Put the cookies in the oven for 5 min. Turn the oven off and leave them in there for another 3-5 min.
Take the cookies out and LET them cool off. They will be ready to eat and taste delicious while still warm:)
